At the heart of the collection is Sylvia’s famed Enchilada Chili Gravy, long recognized as the foundation of great Tex-Mex cooking. Made with a traditional roux, ground chiles, and Sylvia’s own blend of cumin, garlic, and black pepper, it reflects the deep culinary roots of Texas border food.
Chef Sylvia Casares, author of The Enchilada Queen Cookbook and a James Beard Award semifinalist for Best Chef: Texas, has spent her career preserving and sharing the traditions of Tex-Mex cuisine. With the Signature Sauce Collection, she continues her mission to bring authentic border flavors to tables across Texas and beyond.
